This dip takes just a few minutes to throw together, but adds so much to the meal. It tastes much fresher than the shop-bought kind, and the blender does most of the work for you!

INGREDIENTS
6 baby dill pickles
1½ cups mayonnaise
2 tablespoons pickle juice
1 tablespoon fresh dill
1 garlic clove
Black pepper, to taste
METHOD
Keep a little chopped pickle and dill aside for the top. Put the rest into a blender with the mayonnaise, garlic and a little black pepper. Use the soft, feathery bits of the dill and leave out the thick stalks.
Add a little of the pickle juice to start, then blend finely until smooth. Taste and add more pickle juice if needed.
Refrigerate for at least an hour before serving. Sprinkle the reserved chopped pickle and dill over the top.
Big sister tip
Start with a little pickle juice and add more to taste. Chilling the dip for at least an hour gives the flavours time to come together.
