Crispy Battered Chicken Nuggets

Battered chicken with rice on a plate

Every time I make these, everyone is obsessed. They’re basically schnitzel. Just crispier, lighter and somehow even better. The batter comes together in minutes, making them perfect for an easy supper. They also reheat surprisingly well.

INGREDIENTS

  1. Whisk all the batter ingredients together until smooth. Add the chicken pieces and mix until each one is evenly coated.
  2. Heat a shallow layer of oil in a wide frying pan over medium-high heat.
  3. Fry the chicken in batches without overcrowding the pan. Turn each piece once the edges are golden and crisp, then continue frying until golden on both sides and completely cooked through.
  4. Transfer to a plate lined with kitchen paper and serve hot.

Big sister tip

Love preparing ahead? Mix the batter earlier in the day and keep it covered in the fridge. Add the chicken just before you’re ready to fry.
